I have just come back from Morocco ! I spent the week enjoying a variety of local produce as well as family recipes like Taktouka!
Taktouka is one of those recipes which is full of nostalgia for me. In my lifetime, I’ve seen my grandmother, my mother and countless aunties roast peppers over the stove to make this recipe. I used to be mesmerised by the burning and popping of the skin of the green peppers!
I would also really enjoy peeling all the blackened skin off as a child!
I know it sound bizarre but to this day, roasting my own peppers still feels like a very therapeutic activity!
I’ve also always found it hilarious that the colors of taktouka match those of the Moroccan flag!
Depending on the region you are in Morocco, the recipe does vary slightly in terms of spices. Some people add garlic or vinegar . Others add cumin or turmeric to the mix
For me this recipe is my favourite variation of taktouka as it is easy for me to source the ingredients wherever I am in the world:
-2 green peppers
-A teaspoon of Olive oil
-A squeeze Lemon juice
-A sprinkle of Parsley
-A pinch of salt
- Put the peppers straight onto fire at low heat and rotate every now and again until they are mostly blackened.
- Put the peppers in a sealed container or reusable bag for 5 minutes so that they “sweat” off their skin.
- Peel skin off tomatoes and the roasted peppers.
- Finely chop tomatoes and roasted green pepper into slices
- Mix all the ingredients together.
Don’t be fooled by the simplicity of this dish, it is full of flavour and very refreshing when you are in hot weather.
This recipe is packed with nutrients like vitamin A and C. It also has high level of the antioxidant lycopene which is great at helping prevent all types of cancers!
